Radish Chips!

What a week. I got a lovely little cold (cough, cough), so it was fly by the seat of my pants and just get something on the table for dinner. So, to make up for it, I used a lot of stuff for dinner tonight. I had a nice little tri-tip in the freezer, so I took that out to thaw this morning. Grilled that up real nice. To go with it, I sauteed all that yummy spinach. Just a little olive oil and salt and pepper and it was perfect. We also finished up the rest of the romaine. And instead of a starch, I made these radish chips instead.

The recipe can be found here. Since I only had about 7-8 radishes in my bunch, I halved the recipe and they came out perfect. A nice mix of spices without being too spicy. I took mine out of the oven a bit prematurely...I'd let them go a few minutes longer, but I think it depends on how thin you slice them. I used my mandolin, but I think next time I'll go a little thinner. Definitely something to try again.

First Haul!

Week 1! Here we go! Before I start, funny story. I'm lounging in bed this morning, listening to my husband play with the girls and I get a phone call. Who's calling before 8AM? You automatically think bad news, right? Thankfully, it wasn't, but I completely spaced on picking up my basket this morning! The ladies from Bountiful Baskets kindly called to remind me instead of donating my basket. Not that that would be a BAD thing, but how embarassing for me to start this blog with nothing to start with?!? Ladies, I owe you and will be there to volunteer next time. Pinky promise!

OK, on to the basket. It contains a head of romaine lettuce, a bunch of spinach, a bunch of large radishes, a small bunch of broccoli, 2 large yellow onions, 3 avocados, a large bag of black grapes, a box of blackberries, 2 Asian pears, 8 oranges (tangelos?), 4 apples, and 5 tomatoes. I put the avocados and tomatoes into paper bags as they need to ripen.

Already, I ate one of the pears. One girl had an apple, the other had some blackberries, and hubby had an orange. I never have to struggle to get my crew to eat fruit. The veggies are a bit more challenging. Sigh.

Most of this will be consumed as you see it, but I do have some plans for the radishes and bananas. I know you'll be sitting there waiting with great anticipation...

"What's for dinner?"

Are you asked this question on a daily basis? I am. Repeatedly. I'd like to make it a little easier and a little more exciting to answer. So, with the help of Bountiful Baskets, I'm going to be getting one basket of produce every week and post everything I do with the contents. I'll try new recipes and share old ones I've tried before with success. I would love to hear comments, suggestions, and questions. If I don't know, I'll make it up. No! I'll do my best to find the answer.

I've ordered my first basket already, which I'll be picking up on Saturday morning. Can't wait to share what I got! See you soon...
